My husband's favorite dessert is Konafa (كنافة). When I tried it, I felt like I was eating hay, lol. I'm a HUGE texture person, but konafa is one of the most well-known, and possibly one of the most well-liked desserts in Egypt. It's served during Ramadan, but can be found any time of the year.

What you'll need:


- 1 pack (or 1 lb) of Katayfi (this is the weird noodley stuff, and you can find it in most Arab or Greek markets in the US)
- 1 1/1 cups of sugar
- 2 sticks of melted butter
- 1 cup water
- 1/2 large lemon or 1 small lemon (you only need the juice from this)
- 1 lb ricotta cheese
- 1/2 tsp of vanilla extract (not flavoring)
- Butter or non-stick spray if using a pan that isn't teflon



What to do:

- Preheat your oven to 350 degrees.

- Add your water, sugar and lemon juice into a pan and stir over medium-high heat until it boils. Let it sit until it becomes thick and sticky.

- Remove your pan from the heat and let it cool down.

- When the filling has cooled, add the vanilla extract to it.

- In a large bowl, loosen the katayfi and add the two sticks of melted butter.

- Place half of the katayfi in the bottom of a cake pan and cover with ricotta cheese.

- Place the remaining half of the katayfi on top, and press down lightly.

- Let it cook in the oven until the katayfi is golden brown (roughly 30-45 minutes)

- After you take it out of the oven, pour the sugar substance ontop of the katayfi and serve hot or warm.

- Enjoy!

Ok girlies!!

So, I made the khonafa for my husband today and he LOVED it. I actually had it in Egypt and didn't like it, as I mentioned, but I tried this and really liked it!

Who's ready to try it next?
